Bulk- Gluten, Corn, Dairy, Soy, Rice, & Nut free
Note: We recommend a scale to measure out your flour (most accurate).
Do not use a liquid measuring cup for dry ingredients.
This mix will make a 2 lb loaf.
Ingredients:
- 3 3/4- cups flour (or 18.10 ounces)
- 2-3 Tabelspoons honey, maple or sugar
- If baking in oven, dissolve 2-3 teaspoons sugar in 1/2-cup warm water (105-115 degrees), let stand for 10-15 minutes until foams (disregard if using bread machine)
- 1 packet active dry yeast (do not use rapid rise) or one T bulk yeast (not Rapid Rise Yeast)
- 1 tablespoon apple cider vinegar (can also use red wine vinegar or rice vinegar)
- 3 Whole eggs (combined should measure 2/3 to 3/4 cup)
- 1/4-cups olive oil (can also use canola, coconut, grapeseed or butter)
For Oven Method you will also use:
1/2-cup warm water (almond, coconut, soy, rice or regular milk also work very well)
For Bread Machine Method you will use:
1-cups warm water (almond, coconut, soy, rice or regular milk also work very well)
Baking Using the Oven Method:
- Heat oven to 375 degrees.
- Grease and dust two 4-1/2 x 8-1/2 dark, heavy weight loaf pans with potato or tapioca starch. Set oven rack to center.
- Dissolve sugar into the warm water and mix in yeast. Set aside.
- Combine eggs, vinegar, oil,sugar, and warm water (or favorite liquid). Place flour in the bowl of heavy-duty mixer. Turn on low speed and let flour mix for 1-2 minutes, slowly add wet ingredient then add yeast/water mixture. When well combined, gradually increase to highest speed setting and mix for 3:30 minutes. Spoon the dough into loaf pans.
- Let rise for 90 minutes. Avoid too warm a location which can cause air pockets, or cool drafts which can prevent rising. When dough is double in bulk, place in oven and bake uncovered for 15 minutes. After 15 minutes, cover loosely with foil and bake an additional 35-40 minutes. Total of 55-60 minutes. Remove from oven and immediately invert pan to remove bread. Cool on a wire rack.
Baking in a Bread Machine:
For best results, review the instructions that came with your machine. As a general guide use the wheat bread, quick cycle with a dark crust setting.
- Combine eggs, vinegar,sugar, 1 cups warm liquid and oil (its recommended all wet ingredients, including eggs be room temperature).
- Place all wet ingredients into the bread machine pan. Lightly whisk flour then place on top of wet ingredients. Sprinkle yeast on top of the flour.
- Press 'Start.' After approximately 5 minutes, scrape sides of pan with a rubber spatula; this helps combine dry to wet mixture (optional).
- Remove bread from pan when cycle is complete. Do not let the baked breads sit in bread pan once cycle is complete. (This will cause the bread to sink during the cooling, due to the condensation along the sides of the pan).
